Hearty Healthy Recipes for Two (Vegan)

Just because you’re eating a vegan meal doesn’t mean it’s a light meal of just vegetables. Vegan meals can have a rich mouthfeel, be incredibly flavorful and filling. Here are a couple hearty healthy recipes for two.

This week’s organic vegetable delivery box had radishes, spring greens, swiss chard, snow peas, eggplant, carrots, butternut squash, cilantro, and sweet potatoes.

The dogs got the snow peas. I gave away the cilantro and radishes.

I decided I wanted some Indian food this week with the Swiss chard and butternut squash.

Chickpea and Butternut Squash Curry

I substituted parsley for the cilantro because I can’t stand the taste of cilantro.

I used my whole bunch of swiss chard chopped into small pieces instead of spinach.

You’ll want to add the chard in step 2 with the sqaush because it won’t wilt after the heat is turned off like spinach will.

Jamaican Jerk Grilled Eggplant (30 Minutes!)

I made a couple changes to this recipe. I didn’t have any all spice, so I left it out.

I didn’t want to use a hot pepper so I switched it for a jalepeno.

This is a great tasting, quick and easy recipe.

Roasted Carrots and Sweet Potatoes

The carrots and little sweet potatoes were roasted and served with the eggplant.

I just chopped them into bite size chuncks. Tossed with olive oil, and Italian spice blend, salt, pepper. Bake at 425 about 20-25 minutes.
