Asking what’s for dinner tonight is one of the most frequently said phrases when it comes to food. It can be quickly solved with the simple plant-based recipes found here.

This week’s box had spring greens, onion, snow peas, tomato, beets, eggplant, parsley, cilantro, and radishes.

I don’t eat cilantro or radishes, so those go to neighbors.
Both cilantro and parsley are great to put in smoothies to remove toxic metals from the body.
I love eggplant and after my last eggplants were wasted in an Asian recipe I didn’t care for, I still decided to try a recipe I had never made before.
So, What’s for Dinner Tonight?
Vegan Chickpea Curry with Eggplant from Ele Vegan.
It’s a filling recipe with lots of big flavors. I would recommend using 1 1/2 cups (or a whole can) of coconut milk. Mine didn’t end up having near the amount of sauce it needs, or what is pictured.
This recipe is fast and easy to make, you can have dinner on the table in 30 minutes.
I used swiss chard for the greens and brown rice because that was what I had. You can use any kind you want. I make a big pot of brown rice in my Instant Pot for the week so I always have some on hand in the fridge.
I did another curry dish with the snow peas. You may not think of those two things together, but I love this recipe and it’s my go-to recipe for snow peas each year.
My vegan version of this one-pot coconut curry shrimp recipe from Plating Pixels.
I use plain vegan yogurt rather than vanilla flavored. I substitute lightly steamed cauliflower and broccoli for the shrimp. You could use any veggie you like.
The fresh snow peas I get are thick, rather than the thin ones you find in the grocery store, so I cut them in 3rds and put them in right from the start with the onion. The thick-skinned ones take a longer time to cook.

The beets and spring greens went into a salad.
Spring Green Salad with Beets and Walnuts
Ingredients:
4 baby beets chopped into bite-sized pieces
Spring greens
1 pear thinly sliced
1 cup chopped walnuts
Vegan cheese
Directions:
Roast the beets at 400 for 20-25 minutes, let cool slightly
Put the spring greens on plates
Top with cooled beets and pear slices
Sprinkle with walnuts and your favorite vegan cheese
Dressing:
- Juice of 1 lemon
- 1 T white wine vinegar
- 2 T olive or avocado oil
- 1 T agave or honey
- Sea salt
- Black pepper
Mix together and drizzle over salad.
