20 Minute Vegan Potato Leek Soup

This is my first Wednesday without an organic vegetable delivery since January.

After being in the habit of doing my Wednesday posts on the recipes I made from what was in the box, it’s a coincidence that last night I made a new soup recipe I want to share with you.

I did what I often do, which is look at a few different recipes and then make up my own.

I always try to make it simple and easy.

Yes, you can. Let me walk you through how easy it is.

When I saw the beautiful leeks at the store I knew I had to make potato leek soup.

So I grabbed a leek that was on the large side, but not the biggest one. Then I turned around to the potatoes and onions on the other side of the aisle and grabbed 2 pounds of small waxy potatoes and a nice big white onion.

Because I knew I didn’t have space in my freezer to make a big batch of vegetable stock, I grabbed a quart of premade stock.

That’s all I needed.

I already had garlic and herbs at home.

20 Minute Vegan Potato Leek Soup

Ingredients:

1 large white onion

1 large leek

2 lbs. small waxy potatoes

6 good size garlic cloves, smashed (not diced)

2 T olive oil

1 qt vegetable stock

2 bay leaves

A few sprigs of thyme or 1t dried

3-4″ sprig of rosemary or 1t dried

Salt and pepper to taste

Directions:

Heat oil over medium heat in a stockpot.

Chop the onion and add it to the pot.

After a few minutes, the onions will be translucent and you can through in the smashed cloves of garlic.

As soon as you have the leek chopped, throw that in the pot, stirring every few minutes.

Add the chopped potatoes, bay leaves, and stock.

Add salt and pepper to taste.

Cover the pot. Turn up to high and bring to a boil.

As soon as it boils, turn it down to a simmer for about 20 minutes.

Finely chop the thyme and rosemary and add to the pot.

Check the potatoes by poking them with a fork to see if they are done.

Pull out the bay leaves.

When done, turn off the burner.

Use either an immersion blender, or transfer the soup in batches to a blender, and blend until there are only small chunks.

I like my soup with chunks. If you don’t, blend until smooth.

*I added a cup of coconut milk before blending. There was no coconut taste to the soup. In the end, I decided I wouldn’t have needed it so I left it out of the recipe. You can add some in if you think your soup isn’t thick enough.

Makes 6-8 servings

For less than $5 I had 6-8 servings (depending on how much you eat) of homemade soup.

You can’t do that with takeout. And nobody should call what comes out of a canned soup. Please!

And this couldn’t’ be easier.

You chop up the veggies, throw them in the pot.

It takes less than 20 minutes to get everything in the pot and up to a boil. Then just simmer for about 20 minutes while you make a salad, pour a glass of nice white wine and cut up some crusty bread.

A nice homemade dinner and you’ve got several more servings that will be waiting for you in the freezer when you need something to eat in less than 5 minutes!
