This week’s organic vegetable delivery box had tomatoes, corn, peppers, green onions, sweet potatoes, cherry tomatoes, kale, arugula, celery greens, carrots.
As we head into summer here, being able to make things that are quick and easy is even more important. Having recipes that are vegan one-pot recipes is even better.
With a 24 week season, we are just 2 weeks away from this series being over.
I have to tell you I’m ready. I’ve written a lot of recipes, I’ve researched hundreds to come up with more than 60 recipes so far.
Some of them have become favorites of mine I will make over and over. Some, not so much.
But the ones I didn’t care for as much may be favorites of yours. We all have different taste.

This week I’ve got a salad for you that’s not only a whole meal in itself, it’s got almost all of our ingredients in it!
Then some stuffed sweet potatoes that are so easy, filling and pack a protein punch.
Plus a soup and muffins!
Mexican Kale Salad
This salad couldn’t be easier and it takes care of the kale, arugula, cherry tomatoes, and corn.
Changes I made:
I added arugula and kale.
I didn’t use canned corn. I made the corn in my Instant Pot.
I substituted Italian parsley for the cilantro.
Stuffed Sweet Potatoes with Avocado Sauce
This recipe could not be easier. You can make the sauce ahead of time if you like.
Changes I made:
I used black beans instead of kidney beans because kidney beans are like unicorns here.
I used flat leaf (Italian) parsley instead of the coriander (cilantro)
