Healthy Vegan Gluten-Free Coconut Lime Cookie Recipe

Eating healthy, vegan, gluten-free desserts doesn’t have to be difficult. This gluten-free coconut lime cookie recipe is simple, quick and one you can also adapt to other flavors. 2 years ago I tasted an oatmeal coconut lime cookie at the organic farmers market that was amazing. The only problem was part of what made it amazing was all the oil and sugar in the cookie. There was so much oil that bag I took them home in was greasy.

So I’ve been on a quest to make a good cookie without a lot of oil or sugar. I made these last night and they satisfied my craving. If you are used to sugary cookies, add a little more sugar. I ate 2 after my famous Roasted Tomato Soup.

This is a very small recipe. It made just 5 cookies, so you can experiment and make more.

Healthy Vegan Gluten-Free Coconut Lime Cookie Recipe

Ingredients:

  • 3/4 cup gluten free rolled oats
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 2 tbsp brown sugar
  • 1 tbsp plus 2 tsp coconut sugar (or honey if you’re not vegan)
  • 2 tbsp shredded coconut
  • Zest from 1/4 of a very small lime (a 1/8th tsp maybe)
  • 1 tbsp coconut oil
  • 2-3 tbsp nut milk of choice (I use coconut)

It doesn’t take much lime zest to give it the right amount of flavor, so be conservative if your lime is larger.

Blend first 5 ingredients (not honey) together in a food processor or blender. I used a NutraBullet type blender. Mix with other ingredients. Add the milk 1 tbsp at a time and blend. This takes slow mixing. Add a little more milk if needed.

Form into 5-6 cookie shapes, and place on a foil-lined or silicone cookie sheet. Cook 5 minutes at 375 F.
