We are now in week 5 of my organic vegetable box delivery. Each week I do an unboxing video so you can see what I have to work with when I come up with the recipes I’m going to eat each week.
In the video you’ll see this weeks box had cucumber, zuchinni, a poblano chili, an unknown chili, parsely, spring greens, swiss chard, squash blossoms, and snow peas.
I gave away my snow peas. I’m tired of them after getting them 3 weeks in a row. This organic veggie box delivery is such a good deal that I don’t care if I don’t use it all.
I eat plenty of salads and I have more spring greens on my veggie pita at lunch.
My question in the organic box Facebook group wasn’t answered, so I stilldon’t know what the other chili is.
3 Healthy Vegetarian Recipes (Vegan Too)
Baked Zucchini Wedges
This quick and easy side dish recipe tastes really good. You can serve it as a snack or as a side with another main dish. Make sure you eat them while they are hot. This recipe calls for Parmesan cheese, so you can substitute a vegan cheese. I switched it to nutritional yeast, since I don’t have access to vegan cheese here in Cabo.
Unfortunately the squash blossoms didn’t make it. They were dead 2 days later. I was going to use them in a salad. Just chopped.
Stuffed Poblano Peppers
Ingredients:
4 Poblano Peppers cut in half and seeded
1 cup brown rice
1 onion diced
1/2 t ground cumin
1 roma tomato diced
1 15 ounce can of black beans (drained) or 1 1/2 cups fresh cooked beans
1/2 c corn
Salt and pepper to taste
Optional Toppings:
Salsa (your favorite)
Hot Suace
Avocado slices
Cilantro or parsley chopped
Vegan cheese
Directions:
Make rice according to package directions.
Preheat oven to 375Sweat onion in frying pan over medium low heat until they become translucent, about 5-7 minutes. Stir to keep from sticking.
Stir cumin into cooking onion.
Mix cooked rice into onion.
Add diced tomato.
Mix in beans and corn.
Add salt & pepper
Arrange peppers in an 8” square pan and spoon rice mixture into each pepper.
Cover with foil.
Baked covered for 30 minutes and then uncovered for 10 minutes.
You can add salsa and vegan cheese during last 10 minutes.
Remove from the oven, plate and serve with avocado, cilantro/parsley and hot sauce.
