This week’s organic vegetable delivery box had tomatoes, corn, peppers, green onions, sweet potatoes, cherry tomatoes, kale, arugula, celery greens, carrots.
As we head into summer here, being able to make things that are quick and easy is even more important. Having recipes that are vegan one-pot recipes is even better.
With a 24 week season, we are just 2 weeks away from this series being over.
I have to tell you I’m ready. I’ve written a lot of recipes, I’ve researched hundreds to come up with more than 60 recipes so far.
Some of them have become favorites of mine I will make over and over. Some, not so much.
But the ones I didn’t care for as much may be favorites of yours. We all have different taste.
If you’ve enjoyed these videos and recipes and would like more, there are many recipes on this website.
Part of Empowered and Ageless Inner Circle is about health, nutrition, and food. There will be plenty of recipes in there along with more information about individual foods and cooking tutorials.
This week I’ve got a salad for you that’s not only a whole meal in itself, it’s got almost all of our ingredients in it!
Then some stuffed sweet potatoes that are so easy, filling and pack a protein punch.
Plus a soup and muffins!
This salad couldn’t be easier and it takes care of the kale, arugula, cherry tomatoes, and corn.
Changes I made:
I added arugula and kale.
I didn’t use canned corn. I made the corn in my Instant Pot.
I substituted Italian parsley for the cilantro.
This recipe could not be easier. You can make the sauce ahead of time if you like.
Changes I made:
I used black beans instead of kidney beans because kidney beans are like unicorns here.
I used flat leaf (Italian) parsley instead of the coriander (cilantro)
Here’s the week with Morrocan Carrot Red Lentil Soup which is another one bowl recipe.
And even though this is technically 2 bowls, here’s the week where I gave you the carrot muffin recipe I mentioned in the video. Enjoy!
Health and nutrition are a big passion of mine because, without your health, all the success you can achieve is meaningless. In 1981 I started seriously studying health, nutrition, and the mind/body connection. I stopped eating meat in 1990 for health reasons and compassion for animals. In 1999 I was diagnosed with breast cancer. In 2005, the day after Christmas, I lost my mother at the age of 69 to lung cancer. Since then, helping others to regain their health by making simple changes has become a driving force in my life.
Until next time, I’d love to hear your thoughts. Just comment on this post here or on Facebook.
