Quick and Easy Vegan Recipes (Less than 10 Minutes Prep)

All the quick and easy vegan recipes this week can be prepped in 10 minutes and ready to eat in 30 minutes or less. The roasted veggies and green beans are such simple side dishes and yet so full of flavor and nutritional value.

This week’s organic vegetable box has cucumber, onion, sweet potato, butternut squash, gooseneck summer squash, zucchini, tomato, beets, cilantro, and spring greens.

The cucumber and tomatoes went into salads with the spring greens.

I just realized reading this list that the squashes must still be in the veggie drawer in the fridge. I think I got confused with last week getting the same things and making that wonderful soup.

As I mentioned in the video, I put beets in my smoothies, but the way I use them most is in a juice with carrot and cucumber.

Mexican Roasted Sweet Potatoes and Beets

Ingredients:

3 medium or 6 baby sweet potatoes

4 small beets

2 T olive oil

Mexican spice blend

Salt and pepper

Directions:

Preheat oven to 400.

Line pan with foil, Silpat or parchment paper if you like for easy cleanup.

Chop sweet potatoes and beets into bite-size pieces.

Put on a baking pan. (I use my toaster oven 8 x 8 pan)

Pour oil on vegetables.

Shake salt, pepper and Mexican spice blend on vegetables to your taste.

Mix everything with your clean hands to coat all veggies completely.

Bake for 20 minutes.

Instant Pot Green Beans

 

Ingredients:

1 lb green beans

2 T olive oil

2 cloves garlic

1- 1 1/4 cup water

salt and pepper to taste

1 t dried herbs of your choice ( optional)

Directions:

Put all ingredients in Instant Pot. Set on manual low pressure for 5 minutes. Quick Release.

If you don’t have an Instant Pot, (this one is only $79!), I highly recommend you get one, but you can also make this on the stove.

Just cover the beans with water, bring to a boil and then simmer for 30 minutes.

This is the Instant Pot I have. I love it so much that I don’t know how I lived without it!

This recipe uses your green beans and zucchini. If you want to through in the green and yellow, go ahead.
