This week’s organic vegetable delivery box had spring greens, tomatoes, eggplant, Italian parsley, celery, zucchini, baby beets, green onions, watermelon.
As I mentioned in the video, tomatoes, eggplant, and zucchini were the major players in this week’s box. And I wanted to give you a complete meal from salad to dessert.
I started with…
I didn’t change anything except if you are vegan, leave out the cheese or use vegan cheese. It tastes great without the cheese.
This used the zucchini and the parsley. You can serve this hot, warm, or cold. It can be part of antipasti or a salad before the Moussaka or Eggplant Meatballs with Spaghetti.
Your first entree choice…
This is a hearty protein-packed entree, so if you’re a light eater, you might want to just serve a small green salad with this instead of the zucchini salad.
What I Changed:
*I’ve linked to my preference for some ingredients on Amazon.
If you don’t have french lentils, use regular green/brown lentils.
If you don’t have Yukon gold potatoes, use white potatoes.
If you don’t have crushed tomatoes, crush diced or stewed tomatoes with a masher or in your hands.
The easiest way to buy tomato paste is in a tube.
Smoked paprika is very different than regular paprika. They are not interchangeable. Smoked paprika helps give you that meaty taste.
I would say that you’d want to use the cinnamon and nutmeg.
The other optional ingredients are really optional.
I use Silpat liners so I don’t need to use parchment paper or foil.
Our second entree…
What I Changed:
I left out the fake bacon because I couldn’t get it sent down here fast enough.
If you’re like me and don’t know about tempeh bacon, you can order it.
You can order nutritional yeast too. (I love it on popcorn with cayenne)
Either way, you want to use these meatballs, with spaghetti or as a sub sandwich, you’re going to love them!
If you have a little zucchini leftover, what could be better than a healthy antioxidant packed chocolate cake?
What I Changed:
I used coconut sugar.
This is a good gluten-free organic rolled oats.
It is much better to use cacao instead of cocoa. Here’s an organic one.
Now you have a complete meal that’s sure to please.
Last weekend I took the Mediterranean Potato Salad to a BBQ at a friend’s house and everyone loved it!
It would go great with these BBQ Black Bean Burgers too.
